Meal prepping has become one of my favorite ways to stay in control of my blood sugar and save time during a hectic week. As a mom, every minute counts — and as a Type 1 diabetic, every bite matters.
On Sundays, I set aside a little time to plan and prep meals that work for both me and my son, Khayil. It doesn’t have to be complicated — just balanced, nourishing, and toddler-friendly!
What my Sunday routine looks like:
- Planning 3–4 main meals for the week
- Batch cooking proteins like grilled chicken, boiled eggs, or turkey meatballs
- Washing + cutting fruits and veggies for easy snacking
- Preparing snacks like yogurt cups, hummus with carrots, or cheese sticks
- Making one big dish like a veggie-packed pasta or rice bowl we can both enjoy
Meal prep doesn’t just support my health — it keeps our week smoother, calmer, and more intentional.
